One Pot Spicy Pasta #SundaySupper

Today’s post is going to be super quick. Just like this pasta! I am meant to be at work in 30 minutes. This is not an organised Sunday at all!

This week’s #SundaySupper theme was one pot recipes. It took me a whole week to think of something, and in the end I went for Pinterest inspiration.

As you can probably tell I like to make sweet things, and most one pot dishes are savoury. I know you can make desserts in a slow cooker, but I don’t have one.

I really want one, but i’m not sure it’s worth it. What do you think? Do you have a slow cooker? Is it great or do you never use it?

Look how pretty the pasta looks in the pot! When I found the original idea on Pinterest I was in love!

You put all your ingredients in a pan, cook for 10 minutes and you have pasta and sauce! How easy is that?

As you can see I was pretty liberal with the chilli, but I like my pasta spicy. You can adapt this dish in any way you like. I will definitely be going back to this recipe!

Ingredients

  1. 450g dried pasta (I recommend linguine)
  2. 1 tin of tomatoes
  3. 1 small red onion (diced)
  4. 3 cloves of garlic (minced)
  5. 2 tsp minced chilli (more or less to taste)

  7. 950ml vegetable stock
  8. cheese of your choice to top

Instructions

  1. Place everything in a large pan apart from the cheese.
  2. Bring to the boil and simmer for 8-9 minutes until the pasta is cooked.
  3. There shouldn’t be too much liquid left, if there is, reduce it a little more or drain.
  4. Serve with your favourite cheese.
