  • 2½ cups/310g plain flour
  • 1½ tsp bicarbonate of soda
  • ¾ tsp cinnamon

  2. Combine the flour, bicarbonate of soda, cinnamon, ginger, cloves, salt and cayenne pepper in small mixing bowl and set aside.
  3. Blend the butter and sugar in a large mixing bowl. Add the molasses and egg whites and stir until fully combined.
  4. Finally, add the dry ingredients to the mix.
  5. Roll dough into 1 inch balls.
  6. Place them on a lined baking tray and sprinkle with granulated sugar.
  7. Bake in oven for 8-10 minutes or until cookies are golden brown.
